postmodernism: jesus christ this is giving me ideas for the next time I make tri tip sandwiches crusty sliced bread toasted on a griddle instead of rolls, spread with a tiny bit of smoked onion/bacon marmalade and lots of arugula this might top the cilantro mayonnaise I usually make for them this looks and that sounds really good. but in the pic i can’t tell what the meat on the bottom level is (under the greens). it sort of looks like pancetta? seems too thin to be bacon, but either way i’m not sure i would want it on a steak sandwich. love your marmalade idea, ian. also excellent: horseradish bleu cheese. and maybe a thin slice of provolone. i just want to talk about sandwiches all day.
